Your mouth is drooling already, isn’t it? These cookies are so yummy and so easy to make. There is no refined sugar added, just a bunch of healthy, hearty ingredients! You don’t have to feel bad about eating these delicious little bundles of cookie joy. I find they taste a lot like banana bread.. more so than cookies. You be the judge.

Pumpkin Banana Chunk Cookies
(Adapted from Pumpkin Pie Banana Chunk Oatmeal Cookies)
- 1 Flax ‘egg’ (1 tbsp ground flax & 3 tbsp warm water)
- 1 cup GF oats
- 1 cup Flour (I used Sorghum Flour but I suggest an all-purpose GF flour)
- 1/4 tsp xanthan gum
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 tbsp chopped walnuts (I also added a tbsp of sunflower seeds)
- 1/2 teaspoon sea salt
- 1 teaspoon cinnamon
- 2 tbsp chopped chocolate
- 1 tsp pure vanilla extract
- 1/2 cup pure maple syrup
- 1 small banana, chopped
- 3/4 cup canned pumpkin
Directions: Preheat the oven to 375F. Mix flax egg in a small bowl and set aside. Mix dry ingredients in a medium sized bowl and set aside. Mix wet ingredients in a small to medium sized bowl and then add flax egg. Stir. Pour wet mixture into dry ingredients. Stir well and shape cookies onto a pan. Makes 12 large cookies. Cook for 13 minutes at 375F.
1) Mix dry ingredients.
2) Mix wet ingredients. Note – big chunks of banana!
3) Add wet to dry.
4) Bake and enjoy :)
