Ok, so this recipe isn’t a cookie. Whatever, they have chocolate and peppermint in them so they kind of count. Chocolate covered pretzels, or even better, yogurt covered pretzels, are so amazing! I used to eat a whole bag of the yogurt pretzels in one sitting.. not anymore. So long extra calories and bad fats. This recipe for chocolate peppermint pretzels are vegan and gluten free.
Chocolate Peppermint Pretzels
Makes 2 cups pretzels
- 2 cups gluten free pretzels
- 1 cup chocolate chips
- 1 tsp peppermint extract
- 2 candy canes, crushed
1) Break candy canes into small pieces and place in plastic bag. Using a rolling pin, crush the candy. Set aside. Place a piece of parchment paper on a baking pan.
2) Melt the chocolate. To do this, use a double boiler. I made my own double boiler by using two pots. I added water to one pot and brought to a boil. Holding the other pot over the boiling water, I added the chocolate and continuously stirred (don’t let the two pots touch). Once the chocolate was completely melted, I added the peppermint extract.
3) One at a time, take a pretzel and dip in chocolate and then in the crushed candy cane. Set on the baking pan. Once all the pretzels are dipped, place pan in freezer for 10-15 minutes or until set.
