Sweet Potato Tacos with Lime Slaw and Creamy Beans

Sweet Potato Tacos

Is anyone else having one of those ‘I’m so busy I’m going to pull my hair out’ kind of months? I don’t even know how today is March 11, wasn’t it just Valentine’s day?

A busy work and social life means my meals have been pretty boring. I’m still getting my fix of greens and veggies, but I have seriously been slacking in the creative department.

To get my creative juices flowing, I decided to make sweet potato tacos with some delicious toppings.

Sweet Potato Tacos with Lime Slaw and Creamy Beans
Adapted from Whipped Baking

Serves 4

Sweet Potatoes

  • 2 medium sweet potatoes
  • 1.5 tbsp olive oil
  • 1 tsp chili powder
  • salt and pepper

1) Preheat oven to 400C and line a baking tray with foil.

2) Dice potatoes and add to bowl with oil, chili powder, salt, and pepper. Stir to coat.

3) Place evenly on baking tray and cook for 25 minutes (stir once).

Lime Slaw

  • 2 cups shredded red cabbage
  • 1.5 tbsp olive oil
  • 1.5 tbsp vinegar
  • 3 tsp lime juice
  • salt and pepper

1) Add all ingredients to a bowl. Stir to coat and pour into a plastic bag. Shake the bag to ensure everything is coated. Place in fridge until sweet potatoes are cooked.

Creamy Beans

  • 1 can black beans, drained and rinsed
  • 1 tbsp vegan mayonaise
  • 1 clove garlic, minced
  • 1 tsp cilantro paste

1) Add all ingredients to a bowl and stir. Once combined, cover with lid and place in fridge until ready to serve.

To make tacos:

  • Soft or hard taco shells
  • Sliced avocado
  • Kale and/or spinach

1) Heat shells in microwave for 30 seconds.

2) Add sweet potatoes, slaw, beans, and toppings to tacos. Fold and enjoy.
