When I went to Queen’s University, I was obsessed with the Ham Apple Cheddar Sandwich from this awesome student run coffee shop called the Common Ground. Their version wasn’t vegan but it was delicious.
If you went to Queen’s you know the Co Gro. It was a perfect spot to stop after class for a quick snack and a great place to get a coffee, study, or people watch. I must admit, I had the ham apple cheddar sandwich… a lot.
Now that I’m vegan, I had to find a way to make this sandwich dairy and meat free. It is just too good to totally eliminate from my life.
The Co Gro Vegan Ham Apple Cheddar Sandwich
- 2 slices multigrain or GF bread
- 3 slices vegan ham
- 1 slice vegan cheese
- half an apple, sliced
- 1 tsp vegan mayo
- 1 tsp honey mustard
1) Spread the mayo on one slice of bread. Spread the honey mustard on the other slice.
2) Place the cheese, ham, and apple on one piece of bread. Place the other slice of bread on top.
3) Cut in half and devour.
