Easy Smoked Tofu Casserole

Tofu casserole

Another tofu recipe! Who’s excited!

I actually didn’t mean to bombard you with my tofu mania, I’ve just been holding on to these recipes for awhile and thought they needed some love.

And I want you all to love tofu. So I’m going to post them until every single reader out there is a believer. Oh I’m just pulling your leg.. this is my last tofu recipe for awhile!

Tofu Scramble (for two)

tofu scramble

I really look forward to breakfast on the weekend. I like to get up early and prepare a delicious breakfast for myself that I don’t have time to do during the week. I mean I guess I COULD make big breakfasts on weekdays, but I usually only leave 2 minutes and I don’t think I could make french toast or banana-pancakes in 2 minutes.

Unless you guys have a recipe for 2-minute pancakes? Hook a sister up.

“New Year, New You” …

Sound familiar? I feel like everywhere I go lately (online or in the real world) people are talking about all the changes they are going to make this year. I even posted my NY Resolutions in the hopes that I can make some slight changes to keep me on track this year.

Almond Oat Bites

Almond Oat Bites

Merry Christmas, Happy New Year.. yada yada! Hope you all had a great Holiday. The last few weeks have flown by. We were in Newmarket, Cornwall, cottage country and back to Toronto. It was busy, but well worth it!

I can’t believe I’m back at work tomorrow. As much as I have loved these two weeks off, it will be nice to get back on a routine.

The Week Before Christmas

So I decided to change things up a bit this week. With Christmas only a few days away I am sure I am not the only one who is SUPER busy this week. Between work, parties, catching up with friends, and Christmas shopping, there leaves little time for well, anything else.

I don’t know what I am going to eat for dinner every day this week. And I don’t know if I will get my butt to the gym, 3, 4 or 5 times. We shall see – and I am perfectly happy with this plan! In fact, I am happy to continue this until the New Year.

Cauliflower Tacos with Creamy Slaw & Cucumber-Pineapple Salsa

Well that’s quite the title, isn’t it? I couldn’t help it, everything that makes these tacos so darn tasty NEEDED to get some recognition in the title. And a long title obviously means a delicious and super easy recipe that anyone can make.. right?

These taco’s are the bee’s knees, folks. And they go down pretty smoothly with a nice cold beer.

Weekend Recap + Weekly Plan November 25 – December 1

I am so tired.

This weekend took every last ounce of energy from my body and threw it out the window. But I loved every last second of it so I guess being tired for the next day or so isn’t so bad. Oh and I worked until 1am last night. Awesome.

So my weekend with the girls was a blast! Bridget and I took the train from Toronto to Cornwall on Friday night and we had so many good laughs during that 4 hour train ride. It flew by! We got into a bit of trouble though.. apparently you can’t bring your own wine on the train? Who knew ;).
